Cornelius Lab
We have been looking at Taste masking in the Group Technical Centre this month, using a product called SunFiber.
This material was the subject of the spring news letters trails and studies looking at lowing GI.
SunFiber is a water soluble dietary fibre made up of partially hydrolyzed guar gum. We looked at using sunfiber to improve the taste
of an artificial sweetener and a cough medicine, both of which produced promising results.
Artificial Sweetener (Acesulfame K)
In this test we used an apple juice as the base and had three samples: the first containing only Acesulfame K (0.05g), the second
containing 1% sunfiber and Acesulfame K at the same level and the third being a control (only apple juice).
A taste panel of 10 people were asked to score the samples according to whether they thought the sample had a strong bitter astringent taste
or a weak astringent taste. 1 being weak and 4 being strong. These results are shown below.
(Bitter Astringent taste which is associated with artificial sweeteners).
Sample 1: Acesulfame at 0.05%
Sample 2: SunFiber at 1% and Acesulfame at 0.05%
Sample 3: Control.

As the graph shows all taste panel members correctly scored that the first sample only contained acesulfame K. It can also be seen that most
panel members correctly guessed that sample 3 had a weaker bitter astringent taste when compared to the other two samples. The graph clearly
shows that more panel member thought that sample 2 had a weaker taste compared to sample 1.
Cough mixture
Many of us do not like the taste of cough mixture, this experiment was designed to see if Sunfiber could weaken the taste associated with
cough mixtures. Three samples were made up for taste 10 panellists to taste, They were each asked this question " Rank the three samples in
order of strength of cough mixture" (1 being the strongest and 3 being the weakest)
Sample 1: control
Sample 2: 0.5% Sunfiber
Sample 3: 1% Sunfiber

The graph shows that increasing the amount of sunfiber weakens the taste of cough mixture.

Legislation
Importation of Fishery products
New regulations have been set in place for the importation of fishery products. Companies who buy fish oil products from 3rd countries
must ensure that the company they are buying from accompany their products with a model health certificate laid down in commission decisions
95/328/EC and 96/333/EC which contain attestation regarding public health aspects only.
This legislation indicates that only fish products processed in plants compliant with EU food safety regulations will be allowed to be imported.
The EC rulings on this are in EC 853/2004 and EC 1664/2006. The parts important to anyone bringing in fishery produce from outside the EC are
contained in the Veterinary Certificate required by the regulation laid down in EC1664/2006. L329,330 and 331. This can be found on the Internet
by asking Google the EC number and suffix. The regulations contain details such as hygiene requirements, traceability, transport and storage conditions.
The certificate needs to be completed before materials can pass through an EC customs check.
This legislation also applies to capsules, it seems as though if the capsules are imported as a bulk pack and do not have the correct documentation
they will be refused entry at the customs point. It is not certain if the same legislation means that packs of capsules finished for sale without the relevant
certification will be also stopped at the customs inspection.
The Fish Oils must have been processed in an accredited plant before encapsulation so it is worthwhile ensuring the correct valid certification is available before
purchasing any fish products. The main area of concern seems to be South America from where both the capsules and the raw materials have been imported
into the UK.
It was noted that Accucaps the Canadian soft gel manufacturer have the correct documentation to allow their capsules to be imported. This is as a result of their
recent inspection and certification by the EU regulatory authority. As well as this accreditation Accucaps recently passed FDA inspection processes. For more

Trials and studies
Oral Creatine Monohydrate supplement improves brain performance
Creatine has been widely used in body building and also by elite athletes to increase muscle mass and to supply the muscles with energy.
Over the years creatine has been the subject of many trials and studies relating to sporting performance. A study completed at the University of Sydney
has looked at using creatine to improve brain function and has produced some significant results.
The study followed a double-blind, placebo-controlled, cross-over design. Subjects were given 5g doses of supplement (Creatine monohydrate) or placebo
(Maltodextrin), subjects were asked to consume this supplement at the same time each day for six weeks.
Subjects were then asked to complete an intelligence test
ResultsThe results showed that supplementation with oral creatine monohydrate significantly increased intelligence compared with placebo.
These findings could open up the use of creatine in other product types which are not associated with sports nutrition.

Cornelius Column: Creatine in sports nutrition an functional foods
Creatine is a nitrogenous organic acid which naturally occurs in vertebrates and helps to supply energy to muscle cells. Creatine is often taken by athletes as a supplement to improve sports performance and by body builders to increase muscle mass.
A number of methods of ingestion of creatine exist, it can be taken as a powder mixed into a drink, as a capsule or caplet. Once ingested creatine is highly bio-available, whether it is ingested as the crystalline monohydrate form, the form in solution or even in meat.
Creatine is made up of three amino acids: Arginine, glycine and methionine. Our liver has the ability to combine these three amino acids and make creatine.
Around 95-98% of the creatine in our bodies is stored in our muscles. The remaining 2-5% is stored in various other parts of the body including the
brain, heart and testes. Creatine is said to have four functions in the body. To provide additional energy for muscles, to volumize muscles by pulling water

Cloudy Lemonade with DHA

Cut lemons in half and squeeze juice from them
Pass this juice though a sieve to get rid of any pips or pulp
Add the sugar to the lemon juice and stir until all sugar has dissolved.
Place water into a beaker and add Sunactive DHA
Stir until all DHA has dispersed into water.
Add lemon juice and sugar mix to the water and stir
Refrigerate until chilled and serve.
This drink will provide 100mg of refined fish oil per 200ml
