                          Taste Panel

The GTC decided that we needed a trained taste panel who know the basics of taste testing and the flavours they should be looking out for.
This way when we want a product concept to be valuated by taste we can be reasonably sure that the answers given are from panel
members who can identify certain tastes.

                          The Tongue
                          The four taste qualities are:
                          • Sweet (sugar)
                          • Salty (Salt)
                          • Bitter (Quinine)
                          • Sour (citric acid)

Firstly volunteers were asked to identify the four qualities by being given four unidentified samples, one being sweet, one being salty, one bitter and one sour. In order to give a fair test the samples were presented to the volunteer's in a random order. Each volunteer was tested in a sealed room so they could not communicate with anyone who could influence their decision.

25 volunteers were tested, some identified the taste qualities immediately while other were confused by bitter and sour. These volunteers were then educated about the differences in the two tastes and then asked to retake the test. If they guessed correctly they could become a member of the panel, if they could not identify the difference they were not included in the panel. Smokers tend to have problems distinguishing different tastes as taste buds often become damaged as a result of smoking. This was clearly apparent in the more long term smokers whereas the volunteers who had not smoked for a prolonged period did not show this problem. The smokers in the panel will be retested to make sure that their sense of taste does not become damaged.

Cornelius now have a taste panel of 15-20 people, this panel has been used to evaluate product concepts for a number of customers.
More testing will be completed to educated the panel members on textures and mouth feels

                          News from Cornelius

Cornelius Health & Food are launching a Functional Food Toolkit at the FIE, on 30th September until 1st November,
                          at ExCel in London.

The toolkit contains samples of functional ingredients that contribute towards a healthy digestion, skin and eyes, energy and metabolism boost and to control appetite. To aid in formulating, there is an instructive CD containing examples for beverages, dairy, ice-cream, confectionery etc. On a practical note there is information about
how to construct marketing and technical presentations, as well as expert advice regarding legislation and information about making claims for products.

As well as the toolkits, visitors to the Cornelius stand K47 are invited to participate in a free prize draw competition to experience the Jamie Oliver Fifteen Restaurant. The prize includes a dining room tasting menu for two people in either London or Cornwall. This is an opportunity to sample a selection of favourite dishes with a specially

created wine package, pairing individual wines with each of the dishes.

Requests for a Functional Food Toolkit are to be made by visiting the Cornelius Stand.

Visitors to the stand will also be able to discuss their own requirements with the Health and Food team that has a demonstrable track record of success in NPD, a superior knowledge of healthy food issues, formulation and legislation and is supported by Cornelius’s technology centre based at their modern facility in Bishop’s Stortford, England.

                          CORNELIUS SUBMITS CLAIMS TO FSA

A European Regulation on Nutrition and Health Claims made on food requires that these claims be authorised and added to a Community
                          list of permitted claims.

The Food Standards Agency is responsible for compiling the UK national list and invited food businesses to submit eligible claims for inclusion.
Cornelius has been working with Taiyo and AlzChem and have submitted claims for Partially Hydrolysed Guar Gum (SunFiber),
Green Tea Extract (Sunphenon) and Creatine Monohydrate (CreaPure).

The Food Standards Agency will screen claims prior to submission to the EU. The claims will then be reviewed by the European Food Safety

                          Trials and Studies

Slendesta Potato Protein Extract for the Promotion of Weight Loss in Adults: A Meta-analysis of Clinical Studies.

                          Background

Kemin Health has developed Slendesta Potato Protein Extract as a satiety aid. Slendesta is standardised to contain 5% proteinase inhibitors (P12) naturally occurring proteins present in white potatoes. Ingestion of P12 has been demonstrated to significantly decrease hunger ratings in overweight and healthy subjects. Several clinical trials have been conducted by Kemin to evaluate the efficacy and safety of this product. (More information can be found in the column)

This trial describes the evidence that P12 supplied by Slendesta can promote body weight reduction using a meta-analysis approach. Meta- analysis is a statistical methodology commonly used to assess a collection of research results for the purpose of integrating the findings, and therefore provides information supporting the overall strength or consistency of a relationship within the studies being conducted.

                          Study design

A Meta-analysis was performed with four clinical studies (Hilltop 109756, Hilltop 109744, RTL 303-1204, and Koslow 2005) previously conducted for Kemin that evaluate the efficacy of Slendesta for weight loss without changes in lifestyle. All four clinical studies introduced 15 or 30mg of P12 (300 to 600mg of Slendesta Potato Protein Extract 5% Powder) twice daily prior to two large meals as active treatment without any dieting and/or exercise plan, assessed the effect of P12 in overweight and obese humans, and reported at least 6 weeks weight loss outcomes in pounds or kilogrammes. The weight loss between baseline and the longest follow-up measurement was the parameter used to assess the difference between P12 treatment and the non-active treatment. All four studies were analysed using intent-to-treat analysis individually with adjusted common baseline model. Then the difference of mean weight loss and its associated significance level for each study was submitted to the meta-analysis.

The Characteristics of these studies are listed in Table 1

                          Results

                          Weight loss

The results of the meta-analysis for body weight is shown in Figure 1. It shows that the amount of weight reduction promoted by P12 varied among the clinical studies, however, overall subjects experienced a statistically significant greater reduction in body weight when receiving P12 compared with non-active treatments within 3 months (weighted mean difference: 0.69kg or 1.5 1bs, 95% CI: 0.34- 1.04kg, 0r 0.8-2.3 lbs, p<0.001, total n = 410).

Cornelius Column: Slendesta and Weight Management

SlendestaTM Potato Protein Extract (Slendesta) is a satiety aid ingredient introduced by Kemin Health that has been shown to be capable of inducing satiety, the feeling of fullness, in humans.
SlendestaTM is standardized to its content of proteinase inhibitors (PI2), which have been clinically shown to increase the release of cholecystokinin (CCK). CCK is a satiety hormone naturally released from the gut in response to a meal and signals the feeling of fullness. Enhanced satiety can result in less food consumed at meals and reduced snacking between meals, thereby promoting weight loss.

                          Cornelius can help

                          Slendesta samples are now available

                          CCK Mode of Action

CCK is released from enteroendocrine cells that line the small intestine in response to food and products of digestion. Once released, CCK travels through the blood stream to act on various target organs. An important target tissue of CCK is the gastrointestinal tract, where it stimulates enzyme secretion and delays gastric emptying, leading to feelings of fullness. CCK also acts on
the brain leading to feelings of satiety, the behavioural response associated with achieving satisfaction. The combined result of these actions is a decrease or cessation of food intake.
SlendestaTM can be used in a number of ingestion methods, including drinks and capsules. It is produced using Russet Nugget potatoes and is standardised to the active constituent proteinase inhibitors (PI2). Research shows that PI2 such as that in Slendesta, remains intact and stable in potatoes even after heating and cooking. This indicates that PI2 is present in the food supply and that people ingest PI2 on a regular basis when consuming potatoes and certain potato products. In other words, PI2 has been part of the typical diet for as long as potatoes have been consumed by humans and suggests, along with the data from clinical studies, that PI2 supplied by Slendesta has no harmful effects.

Meta-analysis of four clinical trials shows SlendestaTM has a definite effect for losing weight. Selendesta treatment improves the success rate for weight loss and can be considered beneficial to complement a weight management programme. The absence of serious adverse effects in Slendesta treatment groups for all four clinical studies supports the use of Slendesta as a safe dietary supplement.

The regular use of SlendestaTM products in combination with a program of diet and exercise may provide the natural solution to weight management without the side effects on the digestive system that are often experienced with other products.
