Heat the sugar, water and glucose syrup in a pan until clear and all sugar has melted. Boil phase B water and pour over the gelatine, stir until melted. Pour the hot sugar mix into a bowl and add gelatine mix. Quickley plug in an electric whisk and start to whisk the mix. It will start to turn white as it is mixed. Add the hyamax and continue mixing. Mix until the contents of the bowl beocmes thick. Pour the mix into a mould and leave to set over night.
